About Maitake
Maitake (Grifola frondosa, Grifola frondosa, translated as a dancing mushroom, this& name comes from reactions of mushroom pickers, who danced with joy, when they found this amazing and very valuable mushroom). It’s a parasitic fungus from the Polyporaceae family with a sporocarp, which has the shape of a large cluster, which consists of a leg with up to many hundreds of mushroom caps grown together. The sporocarp ofMaitake reaches the width of up to 100 cm. It grows near bases of trees and stumps. Maitake has its homeland in Asia and in Northern America, but today it’s widespread worldwide and cultivated commercially as well.
Maitake is popular in the culinary industry, it has a rich delicate taste and a very pleasant aroma, but is even better known as a medicinal mushroom used for thousands of years in traditional Chinese medicine, while “Western cultures” only described it for the first time in 1785, namely by the Scottish mycologist James J. Dickson. Maitake contains many biologically active substances, from vitamins and minerals, through polysaccharides, proteoglycans (D-fractions), phenols, flavonoids, unsaturated fatty acids and many others.
